IN HONOR/MEMORY OF ARNIE NAKKERUD - A1E - SQUASH - (CASSEROLE DISH) -ONIONS

 


A fellow classmate graduating with the WORWAC class of 66-17. A close friend who is always remembered and honored this day. "You are not forgotten, Arnie."

Your friendship, your antics, your zest for living life and stories still close to my heart. I'd never ever seen a fellow catch a can of cold beer thrown from a convertible at 60 mph while riding a Honda motorcycle. Yes, we were crazy, admittedly so. We were all going to Vietnam. Love ya, brother!!

Always had my camera in hand. Every kind of airplane and helicopter imaginable were always coming and going from the small airport where we were operating out of. This A1E has always been a favorite of mine. I would run to the runway to capture photos of these when ever I heard or saw one circling for a landing. Ohhhh how I would love a ride!!

Squash Casserole

*Brown 1lb. Jimmy Dean sausage. Drain/set aside.

*Saute 1/2 large onion and 6/7 sliced yellow squash.

*In large bowl, beat 3 eggs and one cup of milk.

*Add one cup+ shredded cheese and stir in.

*Add squash and onions, fold in. 

*Add sausage, stir/fold in.

*Pour into large Pyrex baking dish, spread evenly.

*Cover with French's fried Onions. 350 degrees/50 minutes in oven.

*Let set 5 minutes. Eat

Warming now in East Texas. Gardens producing, first cutting and bailing of hay. Talk of another hot summer on the way.

SAILING WARDERICK WELLS CAY EXUMAS - POTATOES - MT. ST. HELENS - SATURAN V LAUNCH

   HARVEST

Potatoes tell when they are ready to harvest. The ground near the roots starts to break apart and the leaves fall off to the sides.
 
Pulling each plant near the root reveals a few of the potatoes it has produced.

Digging with hands in gloves shows how much of a harvest this season in this small metal container.

 

Potatoes and onions now with most every meal. Fresh from the ground produce also shared with neighbors.

Two years ago the potatoes rotted in the ground from the heavy rains. Last year the bugs won. This year, "pass the butter and salt, please."

RONNIE AND JONBOY - BABY REDS - SHREDDING A PATH - "......THE FIRST STEP"

 An early morning visit by Ronnie and JonBoy. Registered Border Collie brothers on their second ride in the side by side.

These are our neighbor's new dogs and they will be with him throughout the day now as he attends to the needs of the farm. He took them out to visit the cows and he said they began puppy growling. Genetics.

These boys are friendly, eager to be petted and ready for adventures. We will enjoy watching them grow to be working dogs and constant companions to our neighbor.

East Texas weather is rain, T-storm possibility, highs in the mid 80's and the night lows mid 60's. Next seven days are mirror images of the previous day's forecast. 

Local farmers are getting in their first mowing and bailing of their hay fields, gardens are coming on and there is catfish fishing in my weeks ahead.

3 YEARS IN EAST TEXAS - SV AIRSPEED MAY 2023 - OLD CARS - AN LAO VALLEY - OLD PHOTOS

Arrived in east Texas three years this weekend. 

...the move starts HERE.

A year and a half moving in and getting settled. Living/sleeping surrounded by boxes needing unpacking. A year of contractors coming and going upgrading the exterior and add-ons we wanted. And the wonderment of new neighbors/like-minded friends and living in the east Texas countryside. 

Local towns, eateries, shopping, doctors, dentists and hours of phone calls rebuilding the frameworks of our lives. And a computer guy!!

Roots are set, my wife is back home living in Texas and each day is taken with a higher appreciation of the little things that we grew up with and practice to this day. Down-sizing is a wonderful thing. Life eventually shows us that we really do not need much to be relaxed, happy and content in these aging years. Less is more at any stage of life me thinks.
