Born in Mamou and raised by a French speaking preacher, her cooking (in my opinion) was the best representation of Cajun cooking. <br /><br />She made a good gumbo, and invited us for dinner. The broth was thinner than what most people are used to, and her roux was very dark. The flavor? Wonderful. All the good seasoning, and just a light touch of Cayenne.
